Can you provide some examples of a rule I can implement with Pollustop that would reject e-mails with ZIP attachments during SMTP? Ideally the rejection message would specify why the message was rejected?

If you run PolluStop, FindAttachment is usually not required, as the
findattachments module is included in PolluStop, and enabled by default.
Just filter out the extensions you don't want using rules such as

Header Field  IN X-AttachExt: zip,X-AttachExt:,X-AttachExt: exe
Action: Reject with...

If you choose to reject, maybe it would be a good idea to setup the
queue to be synchronous, so you can reject the messages during the SMTP
session instead of bouncing them

Note that most of those zip files are virus-infected, maybe an antivirus
would be better (or both the blocker and the AV):
