Router rules are applied in order, so yes, just put your exception BEFORE the global rule, and make good use of the .here specifier if needed.

I guess that would look like this (not tested):

R:M:<thisone@domain.dom> = thisone@domain.dom.here
R:M:<any-address@domain.dom> = thisbox@domain.dom.here
