Router table is all about address transformation, the idea of address availability is not applicable there. Availability handling is done on the protocol level and for mail it's done via MX records. So you can route anything via domain name that is resolved as MX record and may point to multiple hosts with different priorities. Hint: that MX may be in any DNS zone, even not related to the original mail domain.

Or do you just enter two routes as they are read in order from top to bottom?
